Domaine de Calvayrac offers chambres d'hote in a beautifully restored domaine on 17 acres near Montreal. Good access to Carcassonne, Limoux, Bram and the auto route.
En Bonne Compagnie - Chambres d'Hote, Restaurant and Internet Cafe is in Homps, overlooking the Canal du Midi. They are open from the beginning of May to mid-November.

Le Domaine de Loustalviel in Pech Luna is a lovely big old house that has been divided into three self-catering gites. There's a pool and Pech Luna is beautiful. You may as well enjoy yourself while you look for a house.
Les Eaux Tranquilles is a B&B set in two acres of park on the river Aude just outside Quillan in the Haute Vallee of the Aude. A good base for house hunting in that part of the Aude.

In the Fanjeaux, Mirepoix, Castelnaudary area Jean Coste is a renovated farmhouse offering B&B and Chambres d'hote. They also serve dinner by prior arrangement.
Les Tisseyres near Fanjeaux is a chambre d'hote offering evening meals as well as breakfast. The website is in French but both M and Mme Labbez speak English.
